Fall is falling!

This weekend I spent my time baking and making pretty packages. As soon as the weather hinted towards fall I had to make Joy the Baker's Pumpkin Cookies I am obsessed. They pretty much SCREAM fall. Here's a look at me making them!

National 5-a-day month, how are you getting your veggies?

It is National 5-A-Day month. Are you getting enough of your veggies?

Most people aren't. As much of a health-food fanatic I am, I still have trouble getting in that many a day.

Here's what I TRY to do. I start every morning with a green smoothie. Trust me, I know how gross this looks but it is delicious! One of my favorite recipes is from (neverhome) maker. Here's her smoothie:


Delicious! Additionally, I try to consume one can of V8 Low Sodium Vegitible Juices. I have had lots of luck getting them at Sam's Club.
So far that puts me up to 3. I'll be honest, I rarely have greens at lunch. I do try to have a few carrots on the side though, putting me up to 4. Add a vegitible in at dinner and I am good to go!

Designing Again!

Wow, does it feel good to be designing again! Considering that was my job for the past year and half I really hadn't thought much about being away from it.

We have a surprise birthday party coming up so we designed an invitation for her!

Its Monday...

... which means its time to tell you about Monday meals! Life as a college student is pretty hectic. Life as a graduate student, who also has two dogs and somehow got suckered in to playing water polo for Texas Tech is REALLY crazy.

Work from 8ish to 5ish makes for a pretty busy day. Throw in practice Monday, Wednesday and  Thursday from 7-9 (soon to be 8-10) makes eating a semi decent dinner that much more difficult. I will consider today lucky in that there is no practice since there was a tournament this weekend! So what am I cooking this week? Check it out...

Monday: Pizza night!

I am using a whole wheat pizza dough recipe and home-made pizza sauce!

Now, I am cheating a little bit, I made calazones last week and made a double batch of pizza sauce and froze it so tonight will take no time at all!

Tuesday: Tuesday again is no practice. Typically, this is the night we hit Fuzzies, but I always like to plan in advance! I will be making Chile Verde. Once again, I am cheating! I made salsa verde a while back and froze it so it will be a matter of just a few minutes to have everything done!

Wednesday: Practice so I will be running and eating a quick calazone that I froze in between classes!

Thursday: With my few hours of a break in between class and practice, I plan on making Parmesan Chicken Nuggets and pasta!

As far as the rest of the week, I will be attending my first Kalf Fry (totally different from the Stillwater Calf Fry) and then the Texas Tech v. University of Texas game. Get your guns up!!!

Workouts... Starting Today!

So one of my major goals is to get into some serious shape this year. Fortunately, I think I've found my driving force. One of my best friends from childhood to high school is also attending Texas Tech. After her persuading me to not only take a spin class, we will also be playing WATER POLO. Yes you read that right. Its been over 5 years since I have last played it and I have to say I am going to be in over my head.

We have practice 3 days a week. I have a feeling there may be a crowd coming out soon... way too soon to see what it is all about. So with miss Katelyn as my coach, I think I may ultimately reach my workout goal!

Welcome!

Thanks for stopping by my blog! I can't say I am exactly new to the blog thing, but I have decided to start one with purpose: my passions in life. Cali - Okie - Texas would best describe the past few years of my life. Born and raised in central California, I ventured to Oklahoma to go to school. There, I majored in agricultural communications and loved every minute of it. After graduation, I moved to west Texas to pursue my masters in agricultural communications. It was hard leaving my friends and amazing support system in Oklahoma, but so far Texas Tech has made me feel right at home!

In my blog, you will see some of the things that mean the most to me: advocating agriculture, new design work, my dogs, cooking and my goals.
